A deliciously refreshing, bubbly Italian-style lemonade, loosely based on recipe of Livia Iaccarino of Don Alfonso 1890 (2-star Michelin place on the Amalfi Coast)
1 750 ml bottle of Pellegrino needs about 3/4 cups each lemon juice and simple syrup (so about 1/2 cup each water and sugar)...the glass Sodastream carafes are 650 ml so about 2/3 cups each lemon juice and simple syrup
Ingredients:
fresh, quality lemons
simple syrup (1:1, e.g. 1 cup sugar dissolved in 1 cup water)
San Pellegrino mineral water (other carbonated water will suffice but won’t be as good)
ice
Squeeze the lemons (it is essential that the lemon juice be fresh)
Mix the lemons, simple syrup, and Pellegrino in a 1:1:4 ratio (e.g. 1/4 cup lemon juice, 1/4 cup simple syrup, 1 cup Pellegrino)
Stir with ice and enjoy!
